Hubbard is a 2008 Graduate of Ithaca College and attended Grad School in 2009, and was the Ithaca High School Girl's Volleyball Coach in Fall 2008. Hubbard has coached at Southern Tier Volleyball Club from 2007-2009, was the graduate assistant for the Ithaca College women's volleyball team, along with coaching the men’s club volleyball team at Ithaca College from 2005-2010.
Hubbard played for the Horseheads High School Volleyball Team from 2000 to 2003 under Coach Patti Perone. In 2004 she played on the Division I Volleyball team for Binghamton University where the team finished fourth in the conference tournament. From 2005 to 2007 she played on the Ithaca College Division III volleyball team. In 2006-07 Amanda earned AVCA all-American and all-region honors and was an Empire 8 and NYSWCAA first team all star as a junior at Ithaca. She was 2006 Empire 8 Player of the year, was Empire 8 Player of the week three times and ECAC Player of the week once.
